Overview
Kukicha, also known as Karigane cha, or colloquially as "twig tea," is a Japanese green tea produced from the stems separated from tea leaves during the processing of sencha and gyokuro. As a result, there are different types of kukicha corresponding to the type of leaf the stem came from.
Flavor Profile
Kukicha is quite different from other Japanese green teas, and has a tart flavor that many enjoy. Though it is a by-product tea, it is not necessarily considered to be inferior to sencha or gyokuro, just different.
Derivatives of Kukicha
Houjicha is produced by roasting kukicha and/or bancha.
